Sourdough Bread:

Ingredients:

Flour 400g

Whole wheat flour 50g

Sourdough 100g

Water 300g

Salt 10g

For sprinkling

Rice flour 30g

Sesame 8g

Preparation

1- Blend the flours, knead with water and rest for 1 hour. Then add sour yeast, knead for 10 more minutes and rest for 30 minutes.

2- Add salt to the rested dough, knead for 10 more minutes and rest for 30 more minutes. Meanwhile, fold it every 15 minutes. After giving its final shape, put it in the resting basket and put it in the fridge.

3- The next day, bake your fermented dough in the oven at 230C for 30 – 35 minutes.
